docs: fix support email links rendered as code instead of mailto links - #2101

Five places wrapped mailto:support@sourcegraph.com in backticks, so the page showed literal "mailto:" text instead of a clickable email link. Use the [support@sourcegraph.com](mailto:support@sourcegraph.com) form the rest of the docs use. https://sourcegraph.com/docs/self-hosted/how-to/rollback-database (and three other pages) wrapped the support email in backticks:
